
With dark green elegant leaves, cavolo nero has a unique taste that distinguishes it from all other kale varieties. It has a slightly bitter, tangy flavour that mellows into a nutty sweetness when cooked. Perfect in soups, pasta, stir-fried or made into crisps. It's very delicious raw. Just shred it and massage it with salt and lemon. Dress it with olive oil and black pepper.
