Dried Green Peas are a delicious source of veg protein. Apart from adding them to your stew and soups, making a salad with other veg is a delicious way to enjoy them.

Ingredients

  • 250g whole dried peas
  • 500g carrots
  • 50g fresh mint
  • Juice of one lemon

For the dressing

  • olive oil
  • salt
  • lemon juice
  • mint

Instructions

  1. Soak the dried peas overnight - or quick-soak by placing in boiling water, taking off the heat and leaving for 1 hour. After soaking , rinse, place in a pan with plenty of water, bring to the boil, cover and simmer for 45 to 60 minutes until tender. Adding baking powder when soaking will result in softer cooked peas. Leave the cooked peas to cool down before mixing it with the veg.
  2. Grate the carrots
  3. Mix all the ingredients for the dressing in a blender and add to the salad
