naked Oats are a super delicious gluten free substitution for rice. Their texture reminds of pearl barley. This salad is easy to make and perfect for a light summer meal on its own. It's also a great side dish for chicken and fish.

Ingredients

  • 250g naked oats
  • 1-2 cucumbers
  • 200-250g spring onions
  • 50g fresh coriander

For the dressing

  • olive oil
  • salt
  • apple cider vinegar

Instructions

  1. Rinse the oats, bring to the boil then simmer until tender (about 35 - 45 minutes). Speed up cooking by pre-soaking for a few hours.
  2. Mince the onions. thinly slice the cucumbers and chop the coriander. You can adjust the quantities of the veg depending on taste.
  3. When the oats are cooked remove the excess water and leave them to cool down. Remove them from the pot to prevent further cooking.
  4. Mix the oats and the veg and add the dressing
