Carlin Peas have a superb nutty flavour and firm texture, making a great alternative to Chickpeas or Puy Lentils. This salad is nourishing and ideal for a light meal. This salad would pair well with any vegetarian dish.

Ingredients

  • 250g carlin peas
  • 500g beetroots (red or golden or both)
  • 150g baby spinach or any other type of spinach

For the dressing

  • olive oil
  • salt
  • balsamic vinegar
  • 1-2 cloves of garlic

Instructions

  1. Soak the carlin peas overnight - or quick-soak by placing in boiling water, taking off the heat and leaving for 1 hour. After soaking , rinse, place in a pan with plenty of water, bring to the boil, cover and simmer for 45 to 50 minutes until tender. Adding baking powder when soaking will result in softer cooked peas. Leave the cooked peas to cool down before mixing it with the veg.
  2. Cube the beets and steam or boil for about 20 minutes. Leave to cool down.
  3. Mix all the ingredients for the dressing in a blender
  4. Mix the veg and carlin peas together and add the dressing.
